BIG BAD BEAN DIP Ingredients: Meat – 1 pound (Can be beef, moose, buffalo or mixed) Taco seasoning – two packets, about 30 gm (can also try other seasonings) Sour cream – 500 gm (depending on overall size of dish) Avocados – 3 Lemon juice – 1-2 Tbsp Refried beans – one can) Salsa – 1.0 – 1.5 C. Jalapeno peppers – several depending on size, taste Cheese – ½ C. grated, either Jack or Cheddar Nacho chips – one bag for dipping Olives – sliced Green onion – chopped Tomatoes – chopped Fry about 1 lb of meat until well done and crumbly (I have used beef and moose, someday it will be buffalo...) Season with taco seasoning - add 1/2 c water and cook for 15-20 minutes with lid off (I have used packets of taco seasoning mix and I have "winged it" with curry, red chilies, pepper, salt, garlic, jerk seasoning, soy sauce, Worchester sauce - any or all in various combination) Mix half a pkg taco seasoning into 1 pint of sour cream - it's mostly for color and you can use chili powder instead or just use sour cream without seasoning at all Mash 3 avocados and add 1-2 tbsp lemon juice and 1/2 c. sour cream, plain yogurt or mayonnaise In an 8 x 13 pan layer as follows: (or any variation:-) 1 can refried beans Meat mixture 1 - 1.5 c. salsa Sprinkle with sliced jalapeno peppers Avocado mixture Grated cheese Heat in 300F until warmed through (15-30 minutes?) While warm, spread on the sour cream mixture Sprinkle with sliced olives, green onions, chopped tomato, grated cheese, Jalapenos...whatever is in the fridge...
