Chicken Casserole Ingredients: 1 cup mayonaise 1 can cream of chicken soup 1 can mushrooms or 1 1/2 cups sliced fresh mushrooms 1/2 can milk or half & half cream 6 - 8 cooked chicken breasts (cubed) 1 1/2 - 2 cups fresh bread crumbs 2 cups grated cheddar cheese 4 cups of chopped broccoli Method: In a large 9 x 12 ceramic casserole dish, combine the first 4 ingredients until smooth and sauce-like; add cooked chicken breasts and incorporate well. Sprinkle bread crumbs and grated cheese over chicken and place in a pre-heated oven of 375*F. Bake for 30 - 40 minutes or until casserole is browned and bubbling.
