Corn Bread 1 cup yellow cornmeal 1 cup flour ¼ cup sugar 2 tsp baking powder 1 tsp baking soda 1 tsp salt ½ fresh jalapeno finely chopped (you could use a couple of shot of Tabasco instead) 1 cup grated cheddar or Montery Jack cheese 2 chopped green onions 1 cup buttermilk or sour milk 3 eggs 6 tbsp melted butter 350 degree oven. Butter a 9 x 5 loaf pan or 8 x8 cake pan Mix dry ingredients, stir in cheese, green onion and jalapeno. Wisk together milk, eggs and melted butter. Pour wet ingredients into dry, and stir just enough to blend. Pour into greased pan and bake approx 35 minutes until done. Cool in pan 15 minutes, turn out of pan to cool completely. Elaine
