Creole Style Bean Soup 2 ½ C. White beans, soaked and drained 3 C. Chicken broth ½ C. Ham, or smoked sausage, diced 2 Celery stocks, diced 1 Medium onion, chopped 1 Garlic clove, minced ¼ tsp. Salt 1/8 tsp. Pepper 1 leaf Bay leaf 1 tsp. Thyme 1 C. Frozen shrimp 2-3 drops Hot pepper sauce 1 tsp. Worcestershire sauce 1 can 19 oz. Tomatoes 1 can 5.5 oz. Tomato paste 1 Tbs. Dry mustard 1 bag 300 gr. Frozen okra Combine beans with broth in saucepan. Cover and bring to boil; reduce heat, simmer 45 minutes until tender. Add ham (or sausage), celery, onion, garlic, seasoning and sauces. Break up tomatoes; mix with tomato paste and mustard; stir into beans. Simmer 15-20 minutes. Bring to boil, add okra and cook 6-8 minutes. Stir in the shrimp, cook 3-4 minutes, until shrimp and okra are cooked. Serve with whole grain bread or cornmeal muffins. Tanis
