Pizza Dough For 1 large Pizza (size of the one you made that very evening) 1 cup of warm (but not hot water) 3 tsp olive oil 3 cups of all purpose flour 2 tsp of fresh (NOT dry packaged) yeast (you can buy this at the bakery in Sobeys) 1 tsp of salt Mix flour with salt and add 2.5 cups to mixing bowl. Make an indentation in the flour such that the yeast and water will fit. Add 1 tsp of sugar and crumble yeast over it in the flour indentation. Mix olive oil with warm water and pour over yeast. Let it stand for about 5 minutes Mix dough slowly until dough forms, then knead for about 8 minutes. If you want to you can add 2 tbsp of dried, but fresh oregano while kneading. Add remaining 0.5 cup of flour as required and slowly during the kneading process. Place dough in a slightly greased bowl, cover with a towel, and place in a draft free room temperature place for about 60 to 90 minutes or until dough has doubled in size. Gently punch down dough, turn out on a counter top and roll out to form pizza shape. You may need to let the dough rest 5 minutes prior to rolling out. Put pizza dough in pizza pan and spread some olive oil over surface. Ready - You can now add your favourite toppings however you like. Bake Pizza for about 15 to 20 minutes in oven (middle rack) at 425 degrees or in BBQ on top rack for 15 minutes at 450 degrees. Keep an eye on Pizza if baking in BBQ. Gab
